Sauteed Green Beans with Ginger and Cilantro
Serves 20 to 25
10 pounds Green Beans Stem Removed
2 cups blanched almonds
1/2 cup vegetable Oil
8 ounces Ginger Fresh Chop
Salt and Pepper to taste
1 bunch Fresh Cilantro Chop
Blanch green beans until al dente.
Remove and place in an ice water bath to set color, reserve.
Place almonds on a sheet pan and bake in a 350 F oven until lightly browned.
Heat the oil in a large skillet on medium heat and saute ginger in oil until fragrant, add green beans, almonds, and cilantro, and saute until well heated.
Garnish with almonds and serve hot.
Using a spoon to peel the fresh ginger works better than knife.
Baking of almonds brings out the best flavor in them.
