Potatoes cooked with mint and coriander

2-inch diced roasted red potatoes, fresh chopped mint, whole coriander seed.

Spices & seasonings would be provided & finished by Vikas Khanna.                        

 

Chicken Coconut Curry

Spiced chicken simmered in coconut curry sauce

2-inch diced chicken: 50/50 thigh & breast meat marinated with curry powder, salt, plain yogurt, fresh ginger & garlic. (amount as per unit requirement), korma sauce from Zaika

Prep large dice red onion (1 hotel pan), chopped tomatoes (1 can), open 1cs. of canned coconut milk.

 

Channa Saag

Chickpeas and Spinach cooked with cumin infused oil.

Canned, cooked chickpeas, Spinach sauce, chopped Spanish onion and whole cumin seed.

Sauce to be made by Vikas Khanna

Cranberry Rice Pilaf

Basmati rice, frozen peas, craisins (whole spices to be provided by Vikas)

 

Naan

Basil and Onion Raita

Finely chopped red onion (½ hotel pan), chopped basil (½ hotel pan), and plain yogurt (2 cases). Vikas will finish the sauce. Served in 2 oz. portion cups

 

Mango Lassi

Keep IQF mango diced (1cs), sugar, vanilla yogurt (2 cases) & saffron on hand

(Vikas will finish) 4 to 5 oz. per portion
