Cold Summerish Soups

Serves 6

seedless cucumber, cut into 1/4-inch dices
cups tomato juice
tablespoons olive oil
cloves garlic, minced
fresh ginger root, peeled and minced
green chile, preferabaly Serrano, finely minced
Freshly ground black pepper
small red onion, finely chopped
Juice of 2 lemons
  Salt to taste
bunch basil, for garnish
plum tomatoes, finely chopped


Reserve 2 tablespoons of chopped cucumbers and place the remaining in a large mixing bowl.

To the mixing bowl add tomato juice, olive oil, garlic, ginger, chile, black pepper, red onion, lemon juice, salt and mix well until all the ingredients are well mixed.

Transfer to a non-reactive container, cover and refrigerate for upto 5 hours or overnight.

Pour it into 6 chilled glasses and garnish with reserved cucumbers, chopped tomatoes and basil.
